A Good Old Fashioned Blueberry Cake Recipe
Last week I shared the recipe for Jordan Marsh Blueberry Muffins and today I’m pleased to share Ben’s Great Grandmother’s recipe for blueberry cake. How could I not make it? He asked his sister to send him the recipe, went to our little side-yard orchard to pick more blueberries, then put both the basket of blueberries and the printed out recipe on the counter. Hint gladly taken.
The recipe is partially shown being made in the video below at the timestamp of 18:27
Pre-heat oven to 375
Below is the recipe and then the directions as written on the recipe card
INGREDIENTS
1/2 cup butter (softened)
1 cup sugar
2 beaten eggs
1 1/2 cups flour
1 tsp baking powder
pinch of salt
1 1/2 cups blueberries
1/3 cup milk
1 tsp vanilla
DIRECTIONS AS WRITTEN
Cream together butter and sugar
Add the two beaten eggs
Sift together the flour, baking powder, and salt and the blueberries (I folded in the blueberries after the milk and vanilla so that we had more whole berries)
Add the milk and 1 tsp vanilla
I did not have the back of the card to look at, but I baked ours in a small square pan due to Ben’s memory. Pan should be prepped so that it won’t stick (I can only guess that it said prep the baking pan with butter or butter with light flouring). I did my own thing… I used crumple parchment paper in my pan for easy cleaning.
Before baking, I topped ours with a combination of maple sugar, vanilla sugar, and cinnamon. It was so good! Ben’s grandmother used cinnamon sugar
Bake 35 minutes at 375 or until cake tester comes out clean .
