Jordan Marsh Blueberry Muffin Recipe - It’s a New England Thing
This recipe makes one dozen muffins or 8 to 10 large muffins
PRE-HEAT OVEN TO 375 degrees
1/2 cup softened butter
2 Cups Flour
2 Eggs
2 Tsp. Baking Powder
1/2 Tsp Salt
! Tsp Vanilla
1/2 Cup Milk
1 1/2 Cup Sugar
2 1/2 cup of Blueberries ( one pint)
Cream the butter and sugar till fluffy.
Add eggs and mix until blended
Add dry ingredients alternating with the milk
Once mixed, FOLD in the blueberries and the vanilla.
Grease the top of the muffin pan and use cupcake paper.
Pile high in cup for king size muffin (when I use larger tins, I only fill 10 to 11 tins vs 12)
Bake for 25 to 30 minutes or until cake tester comes out clean.
