Creamy Tortellini & Sausage Soup

The below recipe is inspired by one seen online, but I modified mine and thought I would share how I did it since it came out so good and delicious. Oh, did I mention it was easy to make too? You know me, I love easy recipes!

1 lb Italian Sousage

1 Tbsp Olive oil

1 Tbsp butter

1 small onion diced

3/4 teaspoon of garlic powder

A pinch of red pepper flakes

1/4 cup of all purpose flour

3 cups of beef broth

1 can of diced tomatoes (14.5 oz)

1 cup of tomato sauce (I used one with sausage and mushrooms)

10 oz package of tortellini

1/2 tsp dried basil

1 tsp of Italian seasoning

1/4 tsp salt

1/4 tsp pepper

1/2 cup heavy cream

1/4 cup chopped fresh basil

In a large Dutch Oven or pot, heat the olive oil and brown the sausage while breaking it up into small pieces - once done, set it aside

Now sauté the diced onion in the tablespoon of butter, along with the garlic powder, and the red pepper flakes. Once this is done, add the mixture to your browned sausage and put it back on medium heat.

Slowly add the flour and mix it in well. Cook for one minute then slowly whisk in the broth to thicken.

Add the tomatoes, the tomato sauce, dried basil, Italian seasoning, salt, and pepper to the pot and simmer for about five minutes.

Stir in the tortellini and cook for another 6 or so minutes until the tortellini is cooked to your desired tenderness

Then add the parmesan cheese, the cream, and the fresh basil.

Serve hot and enjoy!
